How to make a perfect batch of popcorn, with no burnt kernels! Who knew that making popcorn on the stove instead of in the microwave could be so easy! The only thing We found was that the topping is way too salty for us. The second time we tried it We skipped the sea salt in the topping and then just added a sprinkling over the top once it was all done. Perfect. Now you can try it at your own kitchen.

Summary
As it turns out, the corn that we typically eat is different than the kernels that become popcorn. There’s only one variety of maize that will make it – Zea mays everta. Though it looks like a typical corn kernel, this particular variety is the only one that has the ability to pop and turn into a delicious snack.

Brief History of Popcorn
Indonesian Popcorn also known as Jagung Beledug / Jagung Berondong.

Strains of Popcorn
There are several popular varieties of maize that are cultivated in Indonesia. However, only one of them, the Zae mays everta – Srikandi variety, will actually pop. Though this may seem limited, there are about one hundred different strains of this corn and each of them vary according to flavor, texture, and how they pop. In Indonesia Srikandi veriety need 97 days of harvest, production of 8 tons / ha dry shells, resistant to fall, resistant to downy mildew, resistant to leaf rust, resistant to ear rot and drought tolerant.

For example, one strain of popcorn pops up into a snowflake pattern and another looks like a mushroom. Caramel popcorn manufacturers usually use the mushroom style popcorn because it’s denser and maintains its texture during the process. Snowflake-style popcorn, however, is the most popular for snacking.

Growing Popcorn Kernels
Corn-producing provinces in Indonesia: East Java: 5 million tons; Central Java: 3.3 million tons; Lampung: 2 million tons; South Sulawesi: 1.3 million tons; North Sumatra: 1.2 million tons; West Java: 700 – 800 rb tons, the rest (NTT, NTB, Jambi and Gorontalo) with an average national corn production of 16 million tons per year. The biggest corn producer at present is the United States (38.85% of total world production), followed by China 20.97%; Brazil 6.45%; Mexico 3.16%; India 2.34%; South Africa 1.61%; Ukraine 1.44% and Canada 1.34%. While for EU countries as much as 7.92% and other countries 14.34%.
Total corn production in 2008/2009 was 791.3 million MT.Umur panen 97 hari, produksi 8 ton / ha pipilan kering, tahan rebah, tahan penyakit bulai, tahan penyakit karat daun, tahan penyakit busuk tongkol dan toleran terhadap kekeringan

Popping Popcorn
Once the popcorn kernels have dried, they’re ready to pop! In order for them to do so, they need around 400 – 600 Degrees Fahrenheit. There are a few methods to do this including air popping and microwaving. When the kernel is heated, the moisture inside the kernel turns to steam, which creates enough pressure for the starch to burst. The pressure is so intense that the kernel actually turns inside out. After that, all that’s left is for you to season and enjoy!
